Tomato and Chicken Rice
*Serves 2
Ingredients:
1-2 tomato(s)
Sliced, marinated chicken breast
Chicken Broth*
Corn Starch
Water
Light and Dark Soy Sauce*
Oyster Sauce*
Salt
Sugar
Oil
Ginger
Preparation:
1. Cut the tomatoes into thick, triangular chunks.
2. Have the chicken breast sliced and marinated with salt and pepper.
3. Cut 3-5 slices of ginger.
Cooking:
1. Oil the pan or wok.
2. Cook the chicken with the ginger.
3. Once the chicken is done, add in the tomatoes.
4. Add in the chicken broth to make it "saucy."* (About 1 pint)
5. Once the tomato becomes softer, add it light soy sauce and oyster sauce for taste. Add dark soy sauce for coloring.* (This step is all about judgment--don't put too much of each sauce)
6. Add a dash of salt and sugar for more taste.
7. Add in a teaspoon of corn starch and mix it with water. Quickly stir in the corn starch mix into the sauce. This makes the sauce thicker and less watery.
8. Wait for the sauce to boil.
9. Once finished, serve over rice.
